For the many months leading up to Spring, New Hampshire’s maple producers prepare for the year’s crops, hanging new tubing from tree to tree, adding amendments to evaporator systems, drilling and tapping trees and gathering the sap – all a flurry of industry until the sugar maple runs and steams in the cupolas of the sugar houses.
